Broccoli Crunch Salad

Broccoli is known to have many healing properties including fighting and preventing cancer. Grab these nutrients in a delicious salad used as a side or a meal.


 

INGREDIENTS:

Dressing:

  • 3/4 c. – Mayonnaise
  • 2 Tbsp. – White Vinegar
  • Stevia to taste

Salad:

  • 2 – Brocccoli heads, chopped into small bite sized pieces
  • 1 c. – Raisins
  • 1/2 c. –Sunflower seeds
  • 1/4 c. – Red Onion, finely diced
  • 4-6 – Bacon slices, crumbled
 DIRECTIONS:
  • In a small bowl, whisk together the ingredients of the dressing and set aside.
  • Heat up a pot of water to boiling
  • Blanch the broccoli for 1 minute
  • Immediately submerge the broccoli into ice water to stop the cooking.
  • Combine the broccoli, raisins, sunflower seeds, onion and bacon in a large bowl and pour dressing over it.
  • Refrigerate for 2-3 hours to let the flavors marry.
  • Serve cold.
