Broccoli is known to have many healing properties including fighting and preventing cancer. Grab these nutrients in a delicious salad used as a side or a meal.
INGREDIENTS:
Dressing:
- 3/4 c. – Mayonnaise
- 2 Tbsp. – White Vinegar
- Stevia to taste
Salad:
- 2 – Brocccoli heads, chopped into small bite sized pieces
- 1 c. – Raisins
- 1/2 c. –Sunflower seeds
- 1/4 c. – Red Onion, finely diced
- 4-6 – Bacon slices, crumbled
DIRECTIONS:
- In a small bowl, whisk together the ingredients of the dressing and set aside.
- Heat up a pot of water to boiling
- Blanch the broccoli for 1 minute
- Immediately submerge the broccoli into ice water to stop the cooking.
- Combine the broccoli, raisins, sunflower seeds, onion and bacon in a large bowl and pour dressing over it.
- Refrigerate for 2-3 hours to let the flavors marry.
- Serve cold.
